Subterra is a cocktail bar tucked into the basement of the 8R Building in Dotonbori, one flight down and easy to miss without looking. The bar opens nightly from seven, with weekend hours stretching to two in the morning, and carries a 4.8-star Google rating from several hundred reviews. The drinks list leans into creative, Japan-inflected cocktails, including the award-winning Shinsekai, a milk-washed bourbon old fashioned smoked with hinoki and oak, and the Bee's Tea, built on the tea-based craft gin Ki no Tea. The menu also takes in fruit-forward pours such as the Razmataz and a reasonably priced "Sneaky Link". For a quiet, considered cocktail in the middle of Dotonbori's noise, Subterra is a genuine find. Its hidden-basement character and warm service make it a memorable end to an evening in Minami.
